Recipe: Banana Ice Cream
I enjoy cooking, and creating in the kitchen -- oh, and eating it too.
I've just realised that I have never blogged a receipe on ForkingMad+, so let's change that. Starting with something simple. One ingredient, yes just one.
Ice Cream - total indulgence or the work of the devil?
It's safe to say that most of us are partial to the frozen delight at some point. I personally like one scoop, maybe two, whereas others jump right in an inhale it by the tub-full.
The thought of making your own ice cream might sound tedious, but how about the simplest ice cream recipe on the planet. Forget the sugar, milk, cream and egg yolks; ditch the twiggy vanilla pod; make perfect ice cream with one ingredient.
Here's the recipe:

Ok, so let's expand a little.
Banana Ice Cream Recipe
Take three ripe bananas. The yellow skin should be mottled with black spots. An almost black banana is no good as it will have started to break down internally.
Chop the banana into handy chunks.
Place in a freezer container and cover with an airtight lid.
Freeze until the banana is solid (preferably over night)
Separate the chunks and throw into a blender. You may need to move the banana pieces around in the blender with a spoon (switch off first!).
My blender was not up to the job so I opted for my mini-chopper instead.
After a few minutes you will have a smooth paste with no lump.
Your ice cream is now ready. It will have the consistency of soft-scoop ice cream. Alternatively place it back in the freezer, in an airtight container, and enjoy at a later date.
Three bananas will give you about six ice cream scoops.
Add some flavours
During the final moments of the blending you could add some fruits or sauces.
I added blackcurrant Chilli preserve; two tea spoons to give the ice cream a bit of attitude in the back of the throat without being too hot.

A typical banana (7 inches long) contains roughly:

All in, a banana (and this ice cream) is a phenomenal fruit and good for you too.
This banana ice cream is so simple to make, and best of all it is great for those watching their waistline. It's ideal for people with a food intolerance, such as dairy or gluten. Vegans and Vegetarians will appreciate it too.
